Equipment

  • Heavy-Bottomed Saucepan – For slow-cooking the onions evenly.
  • Wooden Spoon or Spatula – To stir without damaging the onions.
  • Knife and Cutting Board: – For slicing the onions thinly.
  • Airtight Container: – To store the confit in the refrigerator.

Ingredients
  

  • 3 oz butter unsalted
  • 2 lbs Spanish onions halved lengthwise and thinly sliced
  • ½ cup dry white wine
  • ¼ cup white wine vinegar
  • kosher salt
  • black pepper freshly ground

Instructions
 

  • In a heavy bottomed saucepan, melt the butter over medium heat.

  • Add onions and cover the pan.

  • Cook until soft, approximately 30 to 45 minutes, stirring occasionally.
  • Remove the lid and season the onions with salt and pepper.

  • Add the wine, honey, and vinegar. Turn the heat to medium-high and cook until most of the liquid has evaporated.
    ½ cup dry white wine, ¼ cup white wine vinegar
  • Remove from the heat and let cool.
  • Chill before serving.

Notes

Yield: 2 cups
The confit will last for 3 weeks in a tightly closed container in the fridge.

  • Wine Substitute: Replace dry white wine with vegetable broth for a non-alcoholic version.
  • Extra Sweetness: Add 1 tablespoon of honey for a richer, sweeter flavor.
