Ingredients
8cupspopped plain popcornfrom ½ cup kernels
¾cupsugar
¼cuphot sauceFrank's Red Hot Original Sauce
3tbspsunsalted buttercut into pieces
1tspkosher salt
½tspbaking soda
¼tspcayenne pepper
nonstick vegetable oil spray
Instructions
Preheat the oven to 300°F.
Line a rimmed baking sheet with parchment paper. Lightly coat the parchment and a large bowl with nonstick spray. Add popcorn to the bowl. Set the baking sheet aside.
Bring the sugar and ¼ cup water to a boil in a medium saucepan over medium-high heat, stirring to dissolve the sugar. Boil, swirling the pan occasionally, until the caramel is in deep amber color, about 10 to 12 minutes.
Remove from the heat. Stir in the hot sauce and butter (this mixture will bubble vigorously). Return to a boil and cook for another 3 minutes. Remove from the heat; stir in salt, baking soda, and cayenne. Working quickly, (and carefully as the caramel will be very hot), pour the caramel mixture over the popcorn and toss to coat.
Spread out the popcorn on the prepared baking sheet and bake, tossing once, until dry, about 15 to 20 minutes. Let cool.
