For the Dressing 4 tbsps olive oil juice of 1 lime 1 garlic clove minced salt and pepper For the Salad 3 tomatoes seeded and diced 1 cucumber peeled, seeded and diced 2 scallions chopped ⅓ – ½ cup mint leaf chopped 1 jalapeño chile seeded and chopped (optional)
In a jar, whisk together the dressing ingredients.
In a large bowl, combine all the salad ingredients, toss.
Add the dressing and toss.
Refrigerate for at least 30 minutes before serving.
